Ingredients: 2 Ounce(s) white rum 1 Ounce(s) fresh lime juice 5 parts honey 2 parts very hot water 2 Ounce(s) - 3 oz. well chilled sparkling wine

Directions: *Honey syrup dissolves more quickly and is easier to pour than pure honey. To make, combine five parts inexpensive honey with two parts very hot water in a small bottle. Seal, and shake vigorously. Let cool. Add the rum, lime juice and 3/4 ounces honey syrup to a shaker filled with ice. Shake well. Pour into wine glass and top with sparkling wine.
